Bramble Gin

The brambles used in this recipe can be picked from the hedgerows or bought from a shop. This makes a lovely drink that is slightly sweetened and can be mixed with tonic water and ice to make a beautifully coloured long drink. Alternatively drink it in the same way you might drink Port and eat with cheese at the end of a meal. Be warned it is strong!

Bramble Gin

  • 300g brambles (blackberries)
  • 150g caster sugar
  • 1 x 70cl bottle of gin

  1. Wash the brambles and pack into a wide necked bottle or jar, add the sugar and pour over the gin. (Keep the gin bottle for later.)
  2. Shake well to mix and store somewhere cool and dark (it doesn't need to be in the refrigerator). Every day give it a shake to make sure all the ingredients are mixing. Do this for at least 2 weeks and up to 6 weeks although after 2 weeks you only need to shake it every few days.
  3. Strain the gin into a jug through a sieve lined with muslin or a new j.cloth, press it very gently let it drip through but don't squeeze the muslin. Throw away the fruit.
  4. Pour into a bottle and keep out of the light. Drink within 6 months.
